Tuscan Chicken Orzo Meal Prep

Ingredients (per serve)

  • 70g Risoni (Orzo) (Raw)
  • 125g Chicken Breast (Raw)
  • 10g Spinach
  • 10g Sundried Tomato Strips
  • 25ml Thickened Cream (Light)
  • 15g Parmesan Cheese
  • 220ml Water
  •  2tsp Chicken Stock Powder
  • 2tsp Dried Mixed Herbs
  • 0.5tsp Paprika
  • 1 clove Garlic

Directions

  1. Preheat oven to 180 degrees celsius
  2. Prepare chicken: slice chicken into thin strips. In a bowl combine dried mixed herbs, salt and paprika. Add chicken to bowl and coat in seasoning.
  3. To an over safe container add orzo, chicken stock powder, garlic, water, sun-dried tomato, chicken and cream. Stir to mix together. Cover with aluminium foil and cook in oven for 30-35 minutes. 
  4. Remove from oven and take off foil. Add spinach to dish and stir until spinach is wilted. Top with parmesan and cook for a further 10 minutes in oven.

*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.
