Smashed Chicken Gyros

This Smashed Chicken Gyros is our latest weeknight obsession! It's high in protein and ready in under 25 minutes ⚡️

Ingredients:

  • 2x White Tortillas (Mini)
  • 125g Chicken Mince (Raw)
  • 40g Cucumber
  • 40g Tomato
  • 20g Tzatziki Dip
  • 75g White Potato (Raw)
  • 3g Olive Oil
  • Red Onion, to taste
  • Garlic, 1 clove
  • Fresh Parsley, 1tbsp
  • Cumin, 0.5tsp 
  • Oregano, tsp
  • Paprika, 1tsp

Directions:

  1. Prepare ingredients: slice potato into chip sized sticks, slice red onion, finely chop parsley, mince garlic, dice tomato and dice cucumber.
  2. Add potato to air fryer basket and drizzle with olive oil and season to taste with salt. Cook for 16 minutes at 180 degrees celsius.
  3. In a bowl combine chicken mince, garlic, parsley, cumin, paprika, oregano and salt. Mix to combine.
  4. Add half of chicken mixture to one tortilla wrap and press down to flatten. Ensure meat is spread to the edge. Repeat for the second wrap.
  5. Heat pan over medium heat. Once hot add wrap meat side down and cook for 3-4 minutes. Flip and cook for a further 1-2 minutes until golden brown.
  6. Remove from pan and top with tzatziki, red onion, cucumber, tomato and chips.
