Halloween Style - Pumpkin Spice Pancakes

Spiced Pumpkin Pancakes
Ingredients
- 40 g Plain Flour
- 70 ml Plant-Based Milk (Unsweetened) (Almond, Oat, Rice, Cashew)
- 5 g Olive Oil
- 70 g Butternut Pumpkin (Raw)
- 0.5 tsp Baking Powder
- 0.5 tsp Vanilla Extract
- 0.5 tsp Ground Cinnamon
- 0.5 tsp Ground Nutmeg
- 2 tbsp Sugar Free Maple Syrup
Directions
- In a medium-sized bowl, whisk together flour, baking powder, pinch of salt, cinnamon and nutmeg until well combined.
- In the meantime, prepare pumpkin: remove skin and cut pumpkin into small cubes. Place pumpkin in a medium-sized bowl with a dash of water. Microwave on high for 7-10 minutes, until very soft.
- In a blender, combine milk, sugar free maple syrup, vanilla extract and cooked pumpkin. Blend until smooth.
- Pour liquid mixture from blender into dry flour mixture. Stir gently until combined and no lumps remain. Add extra milk if required, until desired consistency is reached.
- Heat a medium-sized pan over medium heat and add oil. Once hot, pour pancake batter into pan to create desired size of pancakes.
- Cook for 1-2 minutes on medium-low heat. When pancakes start slightly bubbling at the surface, flip over and cook for another minute.
- Serve with additional sugar free maple syrup and other toppings, if desired.
*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.
