Spiced Pumpkin Pancakes

Ingredients

  • 40 g Plain Flour
  • 70 ml Plant-Based Milk (Unsweetened) (Almond, Oat, Rice, Cashew)
  • 5 g Olive Oil
  • 70 g Butternut Pumpkin (Raw)
  • 0.5 tsp Baking Powder
  • 0.5 tsp Vanilla Extract
  • 0.5 tsp Ground Cinnamon
  • 0.5 tsp Ground Nutmeg
  • 2 tbsp Sugar Free Maple Syrup

Directions

  1. In a medium-sized bowl, whisk together flour, baking powder, pinch of salt, cinnamon and nutmeg until well combined.
  2. In the meantime, prepare pumpkin: remove skin and cut pumpkin into small cubes. Place pumpkin in a medium-sized bowl with a dash of water. Microwave on high for 7-10 minutes, until very soft.
  3. In a blender, combine milk, sugar free maple syrup, vanilla extract and cooked pumpkin. Blend until smooth.
  4. Pour liquid mixture from blender into dry flour mixture. Stir gently until combined and no lumps remain. Add extra milk if required, until desired consistency is reached.
  5. Heat a medium-sized pan over medium heat and add oil. Once hot, pour pancake batter into pan to create desired size of pancakes.
  6. Cook for 1-2 minutes on medium-low heat. When pancakes start slightly bubbling at the surface, flip over and cook for another minute.
  7. Serve with additional sugar free maple syrup and other toppings, if desired.

*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.
