Ingredients (makes 9 buns):
For the dough:
- 180g Milk (Full Cream)
- 7g Dry Yeast
- 50g Caster Sugar
- 1x Large Egg (Raw)
- 1x Large Egg Yolk (Raw)
- 60g Butter (Salted)
- 350g Bread Flour
- 1tsp Salt
For the filling:
- 60g Brown Sugar
- 1tbsp Cinnamon
- 60g Butter (Salted)
For the cream cheese frosting:
- 120g Cream Cheese
- 40g Butter (Salted)
- 60g Icing Sugar
- 1tsp Vanilla Essence
Method:
- Add milk to a microwave-safe bowl and heat for 40-45 seconds. Transfer warm milk to a bowl and sprinkle yeast over top. Add sugar, egg, egg yolk, and melted butter to bowl, mixing until well combined. Stir in flour and salt with a spoon until dough begins to form.
- Lightly dust the bench with additional flour. Knead dough for 8-10 minutes. Transfer dough ball to well-oiled bowl, cover with plastic wrap and warm towel. Allow dough to rise for 1 to 1 ½ hours until doubled in size.
- Transfer dough to a well-floured surface and roll out into a 35x22 cm rectangle. Spread softened butter over dough, leaving 1 cm margin on one edge. In a small bowl, mix brown sugar and cinnamon, then sprinkle over buttered dough. Rub brown sugar mixture into butter.
- Tightly roll up dough from the 23cm side. Cut edges off roll. Using serrated knife cut rolled dough into 2.5 cm sections creating 9 large pieces.
- Add cinnamon rolls to a lined baking dish. Cover with plastic wrap and warm towel, allow rolls to rise for further 30-45 minutes.
- Preheat the oven to 180°C. Remove plastic wrap and towel, bake cinnamon rolls for 20–25 minutes until edges are slightly golden. For softer rolls, underbake slightly for tender centers.
- In the meantime, combine softened cream cheese, butter, powdered sugar, and vanilla extract in a large bowl. Beat with an electric mixture until smooth and fluffy.
- Remove cinnamon buns and let cool in pan for 5–10 minutes before frosting.
