We understand how frustrating and expensive it can be to purchase copious amounts of different ingredients just to make one meal. This month, our team of Dietitians have created brand new recipes all including 4 or fewer ingredients to make your weekly shopping trolley a little lighter.

With 20 brand new recipes, you can be sure to create delicious weekly meals that won’t stretch your time or financial budget.

Please note that these recipes and nutritional information are only for a single-serve portion. If you're cooking for more than one or want to meal prep, simply multiply the quantity of ingredients by the number of serves you'd like to make. 

 

Air Fryer Tuna Stuffed Capsicum

 

Ingredients:
  • 1x Capsicum (300g)
  • 125g Microwave Rice (Flavoured)
  • 95g Tuna (Canned) (In Oil)
  • 25g Cheddar Cheese

 

Directions:
  1. Cut top of capsicum off and hollow out insides.
  2. Microwave rice as per packet instructions.
  3. Add rice to bowl with tuna and mix to combine. Add rice mixture to capsicum.
  4. Place capsicum in air fryer basket. Cook at 180°C for 10 minutes. Open air fryer basket and top capsicum with cheese, cook for a further 2 minutes until cheese is melted.
    *We recommend using tomato basil flavoured rice for this dish. This meal can be stored in an air-tight container and kept in the fridge for 2-3 days.

 

Vegan Air Fryer Stuffed Capsicum

 

Ingredients:
  • 1x Capsicum (300g)

  • 95g Lentils (Canned) (Drained)
  • 25g Vegan Mozzarella Shreds

 

Directions:
  1. Cut top of capsicum off and hollow out insides.
  2. Microwave rice as per packet instructions.
  3. Add rice to bowl with lentils and mix to combine. Add rice mixture to capsicum.
  4. Place capsicum in air fryer basket. Cook at 180°C for 10 minutes. Open air fryer basket and top capsicum with cheese, cook for a further 2 minutes until cheese is melted.

Easy Chicken Alfredo Pasta Bake

 

 

Ingredients:
  • 70g Microwave Pasta
  • 75g Chicken Breast (Pre-Cooked) (Packaged)
  • 100g Alfredo Pasta Sauce
  • 30g Mozzarella Shreds

 

Directions
  1. Preheat oven to 180°C.
  2. Combine chicken, pasta and pasta sauce in an oven-safe dish and stir until evenly mixed. Top with cheese.
  3. Bake for 10-15 minutes or until cheese is melted and golden brown.

*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.

 

Lamb Souvlaki

 

Ingredients:
  • 100g Lamb Strips (Souvlaki) (Raw)
  • 64g Souvlaki Bread
  • 50g Tzatziki Dip
  • 10g Salad Mix (No Dressing)

 

Directions:
  1. Heat a pan or barbeque to medium-high heat. Add lamb strips and cook for 2 minutes each side, set aside.
  2. Lay out souvlaki wrap and top with tzatziki, salad mix and lamb strips. Roll to close.

*Lamb can be stored in an air-tight container and kept in the fridge for 3-4 days. We recommend assembling souvlaki at time of consumption.

 

Banoffee Yoghurt Cup

 

 

Ingredients:
  • 160g Yopro (Flavoured)
  • 120g Banana
  • 30g Caramel Topping
  • 25g Milk Chocolate

 

Directions:
  1. Add layers of yoghurt, banana, topping and chocolate into a glass or small bowl.

*This snack can be stored in an air-tight container and kept in the fridge for 3-4 days.
