Our Favourite <em>Busy Girl</em> Recipes

To celebrate the launch of our brand new Busy Girl Workouts Program, our team of Dietitians are here to share with you their 5 favourite Busy Girl Recipes.

We know all too well how tricky it can be to find time in your week to grocery shop, prepare ingredients and meal prep while juggling work, uni, mum duties and everything in between. Our brand new Busy Girl Recipes aim to have you in the kitchen for as little time as possible and utilise convenient, minimal ingredients.

Please note that these recipes and nutritional information are only for a single-serve portion. If you're cooking for more than one or want to meal prep, simply multiply the quantity of ingredients by the number of serves you'd like to make.

 

One Pot Mexican Quinoa

 

 

Ingredients:
  • Quinoa (Raw) 75g
  • Capsicum 70g
  • Black Beans (Canned) (Drained) 80g
  • Corn Kernels 30g
  • Diced Tomatoes (Canned) 150g
  • Avocado 65g
  • Red Onion, to taste
  • Taco Seasoning, 2 tsp

 

Directions:
  1. Dice onion and capsicum.
  2. Heat a pot over low heat and add all ingredients, except avocado.
  3. Add one cup of water to pot and cover for 15 minutes, or until water is absorbed.
  4. Serve with avocado.

*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.

 5 Minute Fried Rice

 

 

Ingredients:
  • Microwave Rice 125g 
  • Corn Kernels 50g
  • Green Peas 50g
  • Carrots 50g
  • 1x Egg
  • Scallions, to taste
  • Tamari, 1 tsp

 

Directions:
  1. Microwave rice as per packet instructions.
  2. Dice carrot and chop scallions.
  3. Heat a pan over medium heat and add rice, tamari, corn, peas, carrot and scallions. Stir over heat for 3-4 minutes.
  4. Crack egg in bowl and whisk.
  5. Take pan off heat and pour egg over rice. Stir egg through rice.

*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.

Raspberry White Choc Weet-Bix

 

 

Ingredients:
  • Weet-Bix 45g
  • White Chocolate 25g
  • Raspberries 45g

 

Directions:
  1. In a shallow dish or container, break apart weet-bix.
  2. Pour 120ml of boiling water over weet-bix and mix to combine. Additional water can be added if required to reach desired consistency.
  3. Top weet-bix with raspberries and white chocolate.
  4. Leave to set overnight or refrigerate for at least one hour.

5 Minute Chicken Pesto Pasta

 

Ingredients:
  • Rotisserie Chicken 100g
  • Basil Pesto 40g
  • Spinach 10g
  • Microwave Pasta 150g
  • Parmesan Cheese 20g

 

Directions:
  1. Heat a pan over medium-high heat. Once hot, apply a light spray of oil if necessary.
  2. Add chicken and stir until warmed through. Add pasta, pesto and spinach and stir to combine for 2-3 minutes.
  3. Remove from heat and add to a bowl. Top with cheese.

*This meal can be stored in an air-tight container and kept in the fridge for 3-4 days.

Chicken & Coleslaw Bread Rolls

 

Ingredients:
  • Rotisserie Chicken 70g
  • Salad Mix 20g
  • Cheddar Cheese 20g
  • Bread Rolls (Wholemeal) 70g

 

Directions:
  1. Slice bread roll in half and top with salad mix, chicken and cheese. Close roll and enjoy!

*Chicken can be stored in an air-tight container and kept in the fridge for 3-4 days. We recommend using coleslaw mix for this recipe.
