Avocado Toast Bowl

Ingredients:
- 80g Sourdough Bread
- 1x Egg
- 80g Avocado
- 6g Spinach
- 6g Rocket
- 3g Sesame Seeds
- Lemon Wedge
Directions:
- Slice and toast bread to your liking. Once toasted, cut into large squares.
- Bring a pot of water to boil and add egg in shell. Hard boil egg for 7-8 minutes and remove from hot water to bowl of cool water. Let rest for 3-4 minutes.
- To bowl add spinach, rocket, toast, sliced avocado and egg. Top with sesame seeds and drizzle lemon juice. Season to taste with salt and pepper.
