Avocado Toast Bowl

Ingredients

  • 80g Sourdough Bread
  • 1x Egg
  • 80g Avocado
  • 6g Spinach
  • 6g Rocket
  • 3g Sesame Seeds
  • Lemon Wedge

Directions

  1. Slice and toast bread to your liking. Once toasted, cut into large squares.
  2. Bring a pot of water to boil and add egg in shell. Hard boil egg for 7-8 minutes and remove from hot water to bowl of cool water. Let rest for 3-4 minutes.
  3. To bowl add spinach, rocket, toast, sliced avocado and egg. Top with sesame seeds and drizzle lemon juice. Season to taste with salt and pepper.
